A few plants had notably large central heads but that's not what this variety is known for. It's the abundant side shoots, so it's almost more like a broccolini. The more open flower buds are tender and hold onto flavorings and oils when pan fried- creating the most delicious little flavor cups! Try to harvest when the buds have not started to yellow or open for peak flavor.
