Casper White Eggplant

Delicious 6 inch elongated white fruit is slightly less bitter than many eggplants and has a nice hint of mushroom flavor. Eggplant likes rich soil and does well with a round of liquid fertilizer after fruiting. Pick when skin is shiny and before the color yellows. These can be weak perennials here in south Florida so plant them accordingly.
