Solanum melongena. Chinese String Eggplant is an exceptionally fast-maturing heirloom from East China, celebrated for its extreme tenderness and sweet, delicate flavor. The heavy-yielding plants bear long, slender 10- to 15-inch lavender-violet fruits with creamy white flesh that is tender enough to enjoy raw or cooked whole. Excelling as a spring and fall crop in warm climates, its early production yields abundant harvests that are perfect for sautéing, grilling, or stir-fries. Because the prolific fruit set can easily weigh down the plant, staking is recommended to support its impressive production.
