Purslane

Purslane is often considered a weed but I am not sure why aside from the fact that it is easy to grow. The succulent leaves take no care from us and have a delicious lemony taste. Great tossed in salads or smoothies. Sometimes I'll put a branch in the fridge before I start working in the garden then come back to a cool refreshing watery snack once I am done. It is one of the highest plants in omega 3 fatty acids out there. Nice low growing ground cover habit so can easily be planted underneath other crops. Will reseed freely if allowed.
