Tatsoi is the tried and true swap for spinach here as it is much more tolerant of warm or variable temperatures. Many organic boxed lettuce blends actually use tatsoi in place of spinach so you have probably already eaten it and just not realized you had. It will form a rosette of small bright green spoon shaped leaves. Harvest from the bottom up for extended harvests. Eat raw or cooked and substitute in any recipe that calls for spinach. Quick to produce and reasonable harvest length but I usually succession plant 2 or 3 times over the growing season for continual harvests.

Some of the seed is saved from myself and other small local growers for harder to source varieties that you can't find online.

The majority of the seed varieties will come from dedicated seed supply companies like Working Food or Southern Exposure Seed Exchange to keep up with demand. We always prioritize localized seed sources which have a sustainable and equitable business model.
